The management of the market is entrusted to theConfederazione Italiana Agricoltori Toscana Nord, main supporter of the initiative in collaboration with the Municipality of Lucca, ANABIO (association of the CIA of organic producers) and Slow Food Lucca, Compitese and Orti Lucchesi. The market is part of the circuit "spesa in Campagna".
The collaboration carried out by Cia Toscana Nord and the Municipality of Lucca with Slowfood and its Earth Markets is foundamental: this market due to its characteristics, is fully part of the Markets of the Earth and, therefore, represents the occasion to periodically propose cultural and educational initiatives on food.
There are 11 producers exhibiting, but the number is growing. The selection was made both on the basis of the quality of their offer and because they are in possession of the organic certification (of the primary and transformed product). Two producers are biodynamic and are part of the "Lucca Biodynamic" network.
The certification requirement has led to a wide-ranging selection, also involving the provinces of Pisa and Livorno. However, the distance from the market is never more than 60 km.
The basket of products on sale is quite broad; it is possible to stock up on vegetables (including Slow Food Presidia, such as the Canestrino Tomato from Lucca, the Red Bean from Lucca) and fresh fruit, raw milk cheese, cured meats and Cinta Senese pork, flour, bread and baked goods, wine and honey. Moreover, it is possible to buy Tuscan olive oil protected by the Italian Extra Virgin Olive Oil Presidium, coming from centuries-old or millenary trees.
The market area is limited traffic but it is possible to park nearby.
